Stuffed chicken breasts
Stuffed chicken breasts look fancy, but are surprisingly easy to do. If you're new to this method, the easiest way to stuff a chicken breast is to make a slit down the side of the breast, stuff it with your choice of filling, then snugly wrap it in bacon, prosciutto or parma ham. Place the stuffed chicken breasts on a baking tray with their bacon seams facing down and bake in a hot oven until cooked through.

Crumbed chicken breasts
These pub favourites are easy to recreate at home with a few simple tips. Firstly, you need to ensure that the chicken is of a uniform thickness so that it cooks evenly. To do this, place a chicken breast in a freezer bag then use a meat mallet or rolling pin to pound it until it's roughly 4cm thick. Secondly, after you've fried the chicken finish it off in the oven. Not only will this ensure the chicken is cooked, it will also prevent the coating from over browning in the pan.

Salads with chicken breasts
Chicken breast makes a tasty addition to any salad, instantly transforming it into a meal. Although you can grill the chicken, perhaps the easiest way to cook it is by poaching the breasts beforehand. To do so, place the chicken and a few vegetables and herbs in a pot. Fill with just enough water to cover everything. Bring to a gentle boil, then immediately reduce the heat to low and allow to simmer for 5-7 minutes. Turn off the heat and stand for 5 more minutes before removing and allowing to cool.
