Easy, tender and juicy oven baked chicken.
Ingredients
- 2 skin-off chicken breast fillet cut lengthways
- 1 tsp ginger minced
- 1 tsp garlic minced
- 1 tbs soy sauce
- 1 tbs rice wine vinegar
- 1 tbs hoisin sauce
- 2 red birdseye chilli diced
Method

Step 1Preheat oven to 180C (fan forced).

Step 2Place two pieces of chicken breast onto individual sheets of aluminum foil. Pinch foil at the ends of the breast and raise the sides of the foil to form a bowl of some sort.

Step 3Mix together remaining ingredients in a pouring jug.

Step 4Pour ½ of the mixture over the chicken. Try to keep as much of the mixture on the breast itself as possible.

Step 5Top with remaining chicken breasts.

Step 6Wrap each whole breast tightly with the foil.

Step 7Cook for 20-25 minutes.

Step 8Once cooked, allow to rest for 5 minutes, then remove from foil onto a plate and spoon over the cooking juices.

Recipe Notes
I sometimes add some finely chopped basil in between the breasts. Cooking time depends on the size of the chicken breasts.
