Ingredients

  • 2 tsp oil
  • 400 g chicken breast fillet broken into chunks
  • 2 garlic clove crushed
  • 2 tsp grated ginger
  • 1 onion sliced small
  • 5 mushrooms sliced
  • 440 g (pieces) canned pineapple
  • 1/2 capsicum sliced
  • 10 snow peas sliced
  • 1 tsp chicken stock powder
  • 3/4 cup water
  • 2 tbs soy sauce
  • 1/4 cup tomato sauce
  • 1 tbs apple cider vinegar
  • 1 tbs brown sugar
  • 2 tsp cornflour

Method

  • Step 1
    Heat oil in wok and add onion, garlic, ginger and chicken. Stir-fry until chicken in nearly cooked through.
  • Step 2
    Add other vegetables and stir fry for 1 minute.
  • Step 3
    Add blended cornflour, stock and water, sauces, vinegar and sugar, stir until mixture boils and thickens slightly.
  • Step 4
    Serve with rice or noodles.
Recipe Notes
Chicken thigh can also be used.
