Chicken marinade for barbecues, grilling and smoking.
Ingredients
- 6 skin-off chicken breast fillet
- 3/4 cup olive oil
- 2 tbs balsamic vinegar
- 2 tsp salt
- 2 tsp brown sugar
- 1 tsp dried oregano
- 1 tsp dried basil leaves
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
Method

Step 1Combine all the ingredients apart from the chicken and mix well.

Step 2Pour into a zip lock bag and add the chicken breasts. Marinate for at least 1 hour, preferably in the fringe over night.

Step 3Barbecue or grill chicken until brown but still soft and moist.
Recipe Notes
You can also warm smoke the chicken over either apple or peach wood smoke until cooked, about 45 minutes. Raw sugar can also be used.
