Ingredients

  • 2 chicken breast fillet skin off
  • 2 tbs basil pesto
  • 100 g semi-dried tomato
  • 4 slices prosciutto
  • 1 tbs olive oil

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    Make a small slice in the chicken breast to form a pocket.
  • Step 3
    Fill pocket with basil and semi-dried tomato.
  • Step 4
    Wrap breast with prosciutto.
  • Step 5
    Place in oven tray and drizzle with olive oil.
  • Step 6
    Bake for approximately 20 minutes.
