Chicken is such a versatile dish. The burnt butter, walnut and date stuffing lifts a plain chicken breast from everyday to something special. Wrapping it in prosciutto keeps the chicken moist and adds another dimension of flavour. It's a easy meal for one, or perfect to serve the whole family.
Ingredients
- 2 chicken breast fillets skin off
- 2 dates fresh roughly chopped
- 5 walnuts roughly chopped
- 1 1/2 slices bread
- 6 slices prosciutto thinly sliced
- 45 g butter
- 8 sage leaves chopped fresh
Method

Step 1Preheat oven to 180C.

Step 2Cut a pocket in each chicken breast. Process bread until it forms crumbs.

Step 3Add sage leaves to 30g of butter in a saucepan. Cook over medium heat until the butter turns golden brown.

Step 4Mix butter and sage mix, breadcrumbs, walnuts and dates. Use half this mixture to stuff chicken breasts.

Step 5Lay three slices of prosciutto, overlapping slightly, onto plastic wrap. Place chicken in centre, fold the prosciutto around the fillet and wrap the plastic wrap firmly to form a neat roll. Repeat with second chicken fillet.

Step 6Place in fridge for 15 minutes, then take out and remove plastic wrap. Spray chicken lightly with olive oil and bake for 20 minutes.

Step 7To serve, heat remaining butter and sage until golden brown and drizzle over cooked fillets.
