A flavoursome creamy pie that everyone will love.
Ingredients
- 60 g butter
- 2 chicken breasts diced
- 1 onion chopped
- 125 g mushrooms diced
- 1/2 cup celery diced
- 1 carrot diced
- 1/4 cup plain flour
- 1 1/2 cups chicken stock (liquid)
- 1/2 cup cream diced
- 1 pinch pepper
- 1 sheet puff pastry
- 1 egg beaten
Method

Step 1Heat the butter in a pan and cook the diced chicken and onion until soft.

Step 2Add mushrooms and celery and cook, stirring, for 3 minutes.

Step 3Sprinkle flour over vegetables and chicken, and stir.

Step 4Slowly add the chicken stock and stir until sauce boils and thickens.

Step 5Mix in cream and season with pepper.

Step 6Spoon mixture into a greased, deep casserole dish, or single serve ramekins.

Step 7Cut a circle of pastry and place over the filling.

Step 8Brush pastry with beaten egg and bake at 200C for 20 minutes or until puffed and brown.
Equipment
- 1 ovenproof ramekins
Recipe Notes
I mostly use single serve ramekins as it serves better on the plate, but if using a large casserole dish, this would go lovely with mashed sweet potato and vegetables.
