This lightly spiced cauliflower dish is a great side served with curry. You can also add cooked tofu to this dish for a great vegan main. - Jeff Butterworth/Happy Healthy You

Ingredients

  • 2 tsp coconut oil
  • 1 brown onion chopped
  • 1 carrot peeled chopped
  • 1 cup broccoli florets
  • 1/2 cup chickpeas cooked
  • 1 tbs curry powder
  • 1/2 tsp ground turmeric
  • 1 tbs lime juice fresh
  • 1 cup cauliflower florets
  • 1/3 cup shallots chopped
  • 1/3 cup cashews toasted
  • 1/3 cup coriander fresh
  • Himalayan salt and pepper *to taste

Method

  • Step 1
    Heat the oil in a large pan over med-high heat. Add the onion, carrot and salt and pepper. Cook for 5 minutes or until tender.

  • Step 2
    Add the broccoli, chickpeas, turmeric, curry powder and lime juice. Stir for a few minutes until fragrant.
  • Step 3
    Add the cauliflower and shallots and cook for a further 5 minutes or until the cauliflower is just cooked and the broccoli is bright green. Do not overcook the cauliflower.
  • Step 4
    Season if desired. Sprinkle with toasted cashews and coriander to serve.
