This lightly spiced cauliflower dish is a great side served with curry. You can also add cooked tofu to this dish for a great vegan main.
Ingredients
- 2 tsp coconut oil
- 1 brown onion chopped
- 1 carrot peeled chopped
- 1 cup broccoli florets
- 1/2 cup chickpeas cooked
- 1 tbs curry powder
- 1/2 tsp ground turmeric
- 1 tbs lime juice fresh
- 1 cup cauliflower florets
- 1/3 cup shallots chopped
- 1/3 cup cashews toasted
- 1/3 cup coriander fresh
- Himalayan salt and pepper *to taste
Method

Step 1Heat the oil in a large pan over med-high heat. Add the onion, carrot and salt and pepper. Cook for 5 minutes or until tender.

Step 2Add the broccoli, chickpeas, turmeric, curry powder and lime juice. Stir for a few minutes until fragrant.

Step 3Add the cauliflower and shallots and cook for a further 5 minutes or until the cauliflower is just cooked and the broccoli is bright green. Do not overcook the cauliflower.

Step 4Season if desired. Sprinkle with toasted cashews and coriander to serve.
