Ingredients

  • 1/2 cup water
  • 1/2 tsp cornflour
  • 2 tbs oyster sauce
  • 2 tbs soy sauce
  • 2 chicken stock cube sliced
  • 1/2 cup peanut oil sliced
  • 2 chicken breast fillet cut into pieces finely chopped
  • 1 brown onion finely chopped sliced
  • 2 garlic clove cut into pieces finely chopped sliced
  • 1 capsicum cut into pieces sliced
  • 1 broccoli cut into pieces
  • 2 carrot finely chopped sliced
  • 4 spring onion sliced
  • 1 cup cashews sliced

Method

  • Step 1
    Add water, sauces, cornflour and stock cubes into a small jug and stir to combine.
  • Step 2
    Heat oil in a wok and brown chicken. Remove chicken from wok.
  • Step 3
    Cook brown onion and garlic until transparent.

    Add capsicum, broccoli, carrot and spring onion and cook.
  • Step 5
    Add sauce mixture, chicken and cashews to wok.
  • Step 6
    Stirfry until sauce thickens. Serve with rice.
