Way too easy and very filling!
Ingredients
- 1 chicken breast fillet fat trimmed halved
- 2 tbs basil pesto
- 3 slices tasty cheese quartered
- 3 bacon rashers rindless
- 2 pinches garlic salt
- 2 pinches chives
- 2 1/2 tbs extra virgin olive oil
Method

Step 1Slice each chicken breast piece horizontally in half and open out flat but don't cut all the way across.

Step 2Sprinkle one side of each with garlic salt and chives.

Step 3Spread pesto over one side and cover with cheese slices.

Step 4Close chicken breast pieces up carefully.

Step 5Wrap each chicken piece with a rasher of bacon by hand, ensuring the filling doesn't fall out.

Step 6Heat a heavy-based pan with enough oil to reach about 3-5mm high up the sides,

Step 7When hot, place chicken parcels in pan and turn 3-4 times until cooked through and browned on the outside.

Step 8When turning in pan, lift each chicken piece from the under-side with a wide, flat utensil so the filling doesn't fall out.

Step 9Serve hot.
Recipe Notes
Serve with fresh veggies, pasta or garlic bread. I prefer to use Coon cheese.
