Cornflake-Crumbed Chicken Schnitzel

Ingredients

  • 2 chicken breast fillet halved
  • 150 g Cornflakes crushed
  • 1/4 tsp garlic salt
  • 1/2 tsp fresh flat-leaf parsley chopped
  • 1 pinch salt and pepper *to taste
  • 2 egg
  • 1 tbs milk
  • 1 tbs olive oil

Method

  • Step 1
    Whisk eggs and milk.
  • Step 2
    Mix dry ingredients together.
  • Step 3
    Place chicken in egg wash, drain a little then place in cornflake mixture. Cover well on both sides.
  • Step 4
    Set aside on a plate and place in fridge for 20 minutes.
  • Step 5
    Heat oil on medium-high heat, cook on both sides for 5 minutes or until lightly golden and chicken is cooked through.
Recipe Notes
Serve with chips and salad. For spicy chicken schnitzel add a chopped long red chilli.
