How to make this chicken and mushroom carbonara recipe: key tips
Often when sour cream is added to a hot pan it tends to curdle. In order to prevent this, add the cold thickened cream first as this will allow the temperature of the pan to drop.
Once you’ve added the whisked eggs you only need to cook for about a minute, just enough to allow the sauce to thicken, but too long as they may scramble.

We use chicken breast in our carbonara recipe as it is quick cooking and not as strongly flavoured as thigh fillets. Where parmesan is traditionally used in an Italian carbonara, we ve used tasty. You can use either or even a combination of both!

Ingredients
- 500 g chicken breast cubed
- 4 bacon rashers sliced
- 1 onion diced
- 1 egg whisked
- 4 mushrooms large sliced
- 500 ml cream
- 2 tbs sour cream
- 1 tsp garlic heaped
- 1 cup cheese grated
- 300 g pasta
Method

Step 1Cook pasta and set aside. In a frypan add oil and chicken, and fry until cooked.

Step 2Add bacon, onion, mushrooms and garlic, and cook a further 3 minutes.

Step 3Add cream and sour cream, and simmer for 10 minutes. While stirring add whisked egg and grated cheese.

Step 4Continue stirring until all cheese has melted through. Add cooked pasta and toss until combined.

The flavour develops a lot more if allowed time to simmer slowly once all the ingredients have been added.
What's the difference between chicken alfredo and carbonara?
Alfredo sauce is thick and creamy and is made by cooking down cream and butter in a saucepan. This results in a rich, thick and creamy sauce. In contrast, carbonara is made by combining pasta and a bit of the resulting pasta water with rendered pork, cheese and raw eggs.
