Traditional Italian spaghetti carbonara gets a little Australia twist with the addition of crunchy macadamia nuts.
Ingredients
- 160g Barilla Spaghetti n5
- 2 cloves garlic, finely chopped
- 3 eggs
- 150g parmesan cheese, grated
- 100g bacon, chopped
- 4 macadamia nuts
- 1 Tbsp Tasmanian pepperberry
- 100ml olive oil
- Salt
Method

Step 1Put pasta on to boil in salted water.

Step 2Sauté garlic in oil, add chopped bacon.

Step 3In a bowl mix grated parmesan and whole eggs.

Step 4When pasta is al dente add it to the pan with garlic and bacon along with a splash of pasta water.

Step 5Add parmesan/egg and mix through hot pasta.

Step 6Sprinkle cracked pepperberry and mix through pasta, add salt to taste.

Step 7Finish by grating macadamia nuts over the top.
Recipe Notes
You can find pepperberries at markets, health food stores and green grocers. If you can't find pepperberries, you can substitute with cracked black pepper.
