Casseroles with chicken thighs

Chicken is an ideal companion in a casserole and, unlike its red meat counterparts, doesn’t need to be browned before being added to the pot. Best of all, by using thighs you can be assured that the meat won’t dry out in the pot, and will stay tender and flavourful as it cooks.

Pasta with chicken thighs

Chicken is the perfect addition to pasta, working well with everything from hearty tomato sauces to carbonaras. Try using chicken thighs for slow cooked favourites, or adding it to baked pasta recipes where it will never turn rubbery or dry out.

Stir fries with chicken thighs

Finely slice your chicken thighs and add to stir-fries for unbeatable flavour without any risk of the chicken losing moisture. Add them together with your choice of veggies and a scattering of nuts for added texture and crunch.

Crusted and crumbed chicken thighs

Lock in moisture, and add a flavourful crust to your chicken with these recipes. Here, thighs are coated in everything from nuts and pesto to batter and breadcrumbs. Choose your favourite coasting to reinvent the simple thigh into a show-stopping main.

Baked chicken thighs

Turn on the oven for one of these impressive chicken dishes. For the simplest bake, combine chicken thighs with sliced chorizo sausage, a tin of drained beans or chickpeas, a punnet of cherry tomatoes, olive oil and a sprinkle of cumin and smoked paprika. Bake in a moderate oven for 45 minutes and then dinner is done. 

Bacon wrapped chicken thighs

Chicken and bacon are a match made in heaven, and here, bacon is used as a flavourful wrap, enclosing the chicken and locking in the moisture. Try to use a smoked bacon for even more flavour, and opt for a streaky version to ensure the outside turns nice and crispy.

Chicken in salads

Beyond caesar salad there are so many different ways to serve chicken thighs with leafy greens and sweet and tangy dressings. Thigh cuts can be easily substituted where chicken breasts are normally used. It's an economical option; particularly when cooking for a crowd.

Chicken soup

Great for the soul and anyone with a cold, chicken soup can be cooked with thigh fillets instead of breast pieces. Using the thigh cut will yield a less stringy result as the boiled thigh meat is more tender. 

Marinated chicken thighs

Slower cooking than breast fillets, thigh fillets are ideal for cooking on the barbecue. Easily bought in bulk, chicken thighs are perfect to use with marinades for smoky barbecue chicken fillets or as kebabs. 

Chicken Paella

For a meal you can't rush, paella is well suited to longer cooking chicken thigh fillets. Boned cuts of chicken are essential for a traditional paella as they allow the rice to slowly cook and add an extra depth of flavour.

Apricot chicken

If you were a child of the 70s and 80s you'd be well acquainted with this family favourite casserole. Some of our recipes have reinvented this classic, adding braised leeks, chopped apricots and a selection of herbs to the mix.
