Ingredients

  • 1 tbs oil
  • 500 g chicken thighs diced
  • 200 g chorizo sausage sliced
  • 1 onion diced large
  • 1/2 red capsicum diced
  • 2 garlic clove diced
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1 cup rice
  • 375 g enchilada sauce
  • 4 cups chicken stock (liquid)
  • 1 cup frozen peas
  • 270 g canned corn drained

Method

  • Step 1
    Heat oil in large frypan. Add chicken and cook until brown.
  • Step 2
    Add chorizo sausage, onion, capsicum and garlic. Sauté gently.
  • Step 3
    Add turmeric, cumin, rice, enchilada sauce and stock.
  • Step 4
    Cover and gently simmer until rice is tender and has absorbed the liquid, stirring occasionally during the cooking process so the rice does not stick to the frypan.
  • Step 5
    Add more liquid if mixture is drying out.
  • Step 6
    Add peas and corn and stir through mixture. Cook a further 5 minutes.
