Ingredients

  • 2 tbs olive oil
  • 2 cups dried pasta
  • 1 onion diced
  • 500g chicken thighs diced
  • 600g bolognese pasta sauce
  • 2 eggs
  • 200g ricotta
  • 1/2 cup parmesan grated
  • 1 tsp mixed herbs

Method

  • Step 1
    Preheat oven to 200C. Cook pasta according to instructions on packet.
  • Step 2
    Drain pasta and keep warm.
  • Step 3
    Heat olive oil in large pan over medium heat. Add onion and chicken, cook until chicken is brown.

  • Step 4
    Stir in bolognese sauce and bring to the boil. Remove from heat.
  • Step 5
    Using an electric mixer, beat the eggs, ricotta and parmesan cheese until smooth.
  • Step 6
    Spoon pasta into a greased casserole dish. Pour over chicken sauce and then cover with cheese mixture. Sprinkle the top with the mixed herbs.
  • Step 7
    Bake for 40 - 45 minutes or until topping is golden.
