This easy baked chicken pasta is quick to prepare and even quicker to eat.
Ingredients
- 2 tbs olive oil
- 2 cups dried pasta
- 1 onion diced
- 500g chicken thighs diced
- 600g bolognese pasta sauce
- 2 eggs
- 200g ricotta
- 1/2 cup parmesan grated
- 1 tsp mixed herbs
Method

Step 1Preheat oven to 200C. Cook pasta according to instructions on packet.

Step 2Drain pasta and keep warm.

Step 3Heat olive oil in large pan over medium heat. Add onion and chicken, cook until chicken is brown.

Step 4Stir in bolognese sauce and bring to the boil. Remove from heat.

Step 5Using an electric mixer, beat the eggs, ricotta and parmesan cheese until smooth.

Step 6Spoon pasta into a greased casserole dish. Pour over chicken sauce and then cover with cheese mixture. Sprinkle the top with the mixed herbs.

Step 7Bake for 40 - 45 minutes or until topping is golden.
