Start with a biscuit base

If your only experience with ice-cream sandwiches comes from the pre-packaged variety, you're in for a big surprise. Not only can you ditch the lack lustre wafer biscuits, you can also start making your own taste combinations to suit your personal preferences. Here you'll find four of our favourite recipes that are ideal to form a base for your dessert, but feel free to substitute this for your own choice.

Cut out a shape

If you'd like to make a pretty heart, or perfect square, base for your ice-cream sandwich, forget the biscuits, and choose a cake base instead. Cook any of these recipes in a lamington tin, then trim the cake to 5 mm-thick. Using a cookie cutter, cut out your choice of shapes from the cake, ensuring that you keep an even number to pair up together.

Choose your ice cream

If you're feeling adventurous, try making your own ice-cream using one of the below recipes. However, to save on time, you can also choose a good-quality premade ice-cream to add to your sandwiches.

Pump up the flavour

Set your ice-cream aside from 20 minutes to soften, then try adding in your choice of additional flavours to make your ice-cream sandwiches into something special. Here are a few ideas of things you can add to your ice-cream:

After dinner mint

Top a dark chocolate biscuit with a mint chocolate ice-cream, drizzle over a fudge sauce and top with another biscuit.

Australian classic

Sandwich macadamia ice-cream between two Anzac biscuits. For even more decadence, add a little salted caramel sauce.

Berry sensation

Sandwich mixed berry ice-cream, mixed with fresh berries, between two shortbread biscuits. Add a drizzle of raspberry coulis for even more flavour

Chocolate-lovers delight

Cut out squares of brownie and top with white chocolate ice-cream and a drizzle of chocolate sauce. Add another brownie and decorate the top with white, milk and dark chocolate curls.

Lemon zing

Top a lemon shortbread with a swirl of lemon curd and a dollop of rich vanilla ice-cream. Top with another shortbread biscuit, then decorate the top with candied lemon and a drizzle of the poaching syrup.
