Ingredients

  • 5 egg yolks
  • 2 cup milk
  • 1 1/2 cup thickened cream
  • 1/2 cup pouring cream
  • 1 cup brown sugar firmly packed
  • 3 tbs honey
  • 1/4 tsp salt
  • 1 vanilla bean

Method

  • Step 1
    Heat milk and vanilla bean to simmering but do not boil.
  • Step 2
    Whisk egg yolks, sugar, honey and salt until light and frothy.
  • Step 3
    Slowly combine the hot milk milk with the egg mixture.
  • Step 4
    Transfer back into the milk saucepan and stir over a medium heat until the mixture coats the back of a spoon.
  • Step 5
    Remove vanilla bean, strain custard and stir in cream.
  • Step 6
    Cover surface with cling wrap and refrigerate for 4 hours or overnight.
  • Step 7
    Make up as per ice cream maker directions.

  • 1 ice-cream machine
Recipe Notes
I use 2 tablespoons of Queens vanilla essence instead of the vanilla bean. It's a really lovely ice cream that is savoured by all the family!
