A delicous ice cream. I call it gold star because it's a real winner.
Ingredients
- 5 egg yolks
- 2 cup milk
- 1 1/2 cup thickened cream
- 1/2 cup pouring cream
- 1 cup brown sugar firmly packed
- 3 tbs honey
- 1/4 tsp salt
- 1 vanilla bean
Method

Step 1Heat milk and vanilla bean to simmering but do not boil.

Step 2Whisk egg yolks, sugar, honey and salt until light and frothy.

Step 3Slowly combine the hot milk milk with the egg mixture.

Step 4Transfer back into the milk saucepan and stir over a medium heat until the mixture coats the back of a spoon.

Step 5Remove vanilla bean, strain custard and stir in cream.

Step 6Cover surface with cling wrap and refrigerate for 4 hours or overnight.

Step 7Make up as per ice cream maker directions.

Recipe Notes
I use 2 tablespoons of Queens vanilla essence instead of the vanilla bean. It's a really lovely ice cream that is savoured by all the family!
