1. Pick the right tray

Choose either a flat baking sheet or a tray with a small lip to cook your biscuits on. Opt for a tray made from a heavy material, which is unlikely to buckle under the heat and will stop the biscuits from overcooking on the bottom. It's important to ensure that the tray isn't too deep or the biscuits won't brown evenly.

2. Add a lining

No matter what tray you use, always line it with baking paper to ensure the biscuits are easy to remove. This will also help protect the tray and make cleaning up easy.

3. Keep a distance

Never overcrowd your biscuits on the tray. Give each one room to expand and for air to circulate around and cook it evenly. The easiest way to ensure they have enough space is to place a row of biscuits at the top of the tray, then line up the next row to sit behind the gaps left by the biscuits in front. Continue this pattern until the tray is full.

4. Let it rest

When the biscuits are cooked, pull the trays out of the oven and let the biscuits sit for five minutes before placing them on a wire rack. This will allow the biscuits to settle and prevent them from falling apart as you remove them.

5. Cool it down

Always allow the biscuits to completely cool on the wire rack before packing them away. This will ensure your final biscuits are firm and crisp rather than soft and soggy.
