Craving peanut butter and chocolate? Then these are for you. Not only are they gluten-free and refined sugar-free, they’re also vegan! You’d never know something so decadent could be packed with such good-for-you ingredients.
Ingredients
- 1/2 cup coconut flour
- 2 tbs chia seeds
- 1/3 cup cashews raw
- 2 tbs peanut butter heaped
- 2 tbs maple syrup
- 1 tsp sea salt
- 1 tbs coconut oil melted
- 1/4 cup warm water
- 1/4 cup dark chocolate chopped
Method

Step 1Preheat oven to 180C.

Step 2Add all the ingredients to a food processor, except for the chopped chocolate, and process until the mixture comes together. You will know when the mixture is ready, as it will be sticky enough to hold its shape when pressed. If it is too dry, add a touch more water.

Step 3Add the chopped chocolate and stir through.

Step 4Spoon 1tbs of mixture onto a lined baking tray and shape into a cookie.

Step 5Bake for 12-15 minutes, until golden around the edges.
Recipe Notes
You can replace raw cashews with raw almonds if you prefer.
While most dark chocolate varieties containing over 70% cocoa are free from dairy, not all dark chocolate is suitable for vegans. Check the ingredients before purchase.
