Is there any better combination than chocolate and peanut butter? This recipe is so easy to make and uses only a few simple ingredients. Life’s all about balance – and this is the perfect excuse to treat yourself (without the added nasties)!
Ingredients
- 4 tbs almond meal
- 2 tbs cocoa powder
- 1 egg
- 3 tbs milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tbs maple syrup
- 2 tbs peanut butter *plus extra to decorate
- 1 tbs coconut oil
Method

Step 1Preheat the oven to 160C.

Step 2Place all the ingredients, except for coconut oil, into a bowl and use a fork or whisk to combine. Whisk for 5 minutes until there are no clumps and the mixture is light and bubbly.

Step 3Use the coconut oil to lightly grease two small ovenproof bowls. Spoon the mixture equally into each bowl.

Step 4Spoon 1tbs of peanut butter into the centre of the batter in each bowl.

Step 5Place the bowls into the oven and bake for 15 minutes, or until a skewer inserted into the centre comes out clean.

Step 6Serve the fondants immediately with fresh berries and extra peanut butter to taste.
Recipe Notes
You can use any milk of choice: almond, coconut or dairy.
Use coconut oil to grease the moulds.
When you’re mixing the ingredients together, whisk for at least 5 minutes to incorporate as much air into the batter as possible. This way, your fondant will be light and fluffy.
