The cheese and tomatoes make this loaf moist and tender.
Ingredients
- 2 tsp oil
- 1/2 cup water
- 1/4 cup millet
- 350 g tofu
- 1 egg
- 1 cup tomato juice
- 1 cup rolled oats
- 2 tbs sunflower seeds ground
- 1 cup cheese grated
- 1/4 cup soy sauce
- 2 tsp garlic powder
- 1/2 tsp basil
- 1/2 tsp thyme
- 1 carrot grated
- 1/2 capsicum
- 1 onion
Method

Step 1Preheat oven to 175C.

Step 2Lightly oil a loaf pan and set aside.

Step 3In a saucepan, bring water to boil, add millet seeds, cover and cook for 15 minutes.

Step 4Puree tofu in a blender. Add the eggs and tomato juice, pour mixture into a bowl, fold in all other ingredients and stir.

Step 5Spread mixture in loaf pan and bake for 45 minutes. Cut into slices and serve.
