These quick and easy muffins are a great way to hide vegetables from the kids!
Ingredients
- 2 cups mixed vegetables grated
- 1 1/2 cups plain flour
- 3 tsp baking powder
- 1 cup cheese grated
- 2 eggs lightly beaten
- 1/3 cup olive oil
- 1/2 cup milk
Method

Step 1Preheat oven to 180C.

Step 2Grease a 12-hole muffin pan.

Step 3Mix vegetables and ¾ cup of cheese with the flour and baking powder.

Step 4Whisk together the eggs, oil and milk, then add to the flour mixture.

Step 5Stir until just combined.

Step 6Spoon the mixture evenly into the muffin holes and sprinkle with remaining cheese.

Step 7Bake for 25 minutes.

Recipe Notes
These muffins are tasty served warm.
Freeze any spare muffins to have on hand as a healthy snack.
Vegetables used include: zucchini, potato, carrots etc.
