Ingredients

Apple pie filling

  • 1 tsp butter
  • 1 pinch ground cinnamon
  • 1 apple cored diced large

Pancakes

  • 70 g buckwheat flour
  • 1/2 tsp baking powder
  • 120 ml milk
  • 1 egg large
  • 1 tsp honey warmed
  • 1 tsp vanilla extract
  • 1 tsp butter
  • 2 tbs Greek yoghurt
  • 1 pinch ground cinnamon for dusting

Method

  • Step 1
    Heat butter in a small saucepan over medium heat. Once foaming, stir through cinnamon, apple and 1/2  cup of water, and cook covered for 5 - 8 minutes until just beginning to soften and liquid has thickened. Set aside.
  • Step 2
    Combine flour and baking powder in a medium bowl. Whisk milk, egg, honey and vanilla together and combine with dry ingredients.
  • Step 3
    Heat butter in a large non-stick frypan over medium heat. Use 1/4 cup measure to pour each pancake and cook for 1 - 2 minutes each side until golden.
  • Step 4
    Place a pancake on each serving plate, top with a quarter of the apple filling, add another pancake, more apple, another pancake and finish with yoghurt, remaining apple and dust with cinnamon.
