A quick and flavourful version of crumbed chicken.
Ingredients
- 2 chicken breast fillet cut lengthways halved large
- 1 1/2 cup fresh breadcrumbs
- 1/3 cup parmesan cheese finely grated
- 1 tbs thyme finely chopped
- 40 g butter melted
Method

Step 1Preheat oven to 200C.

Step 2Combine the breadcrumbs, Parmesan, thyme and pepper with the butter.

Step 3Pat the chicken with kitchen paper towel to absorb any excess moisture.

Step 4Place chicken onto a baking dish lined with baking paper.

Step 5Sprinkle the crumb mix on top of the chicken.

Step 6Bake for 10 minutes until the crumbs are golden brown and the chicken is cooked through.
Recipe Notes
You must use fresh bread crumbs for this recipe. This is equally good served with roast vegetables or coleslaw and salad. You can also cook fish using this crumb topping but substitute dill instead of thyme.
