Ingredients

  • 1/2 Chinese cabbage thinly sliced
  • 2 celery stick diced
  • 1 green capsicum diced
  • 1 red capsicum diced
  • 1 bunch fresh chives chopped
  • 1/2 bunch coriander chopped
  • 100 g fried noodles
  • 3/4 cup flaked almonds toasted
  • 3/4 cup sunflower seeds toasted

Dressing

  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 cup brown sugar
  • 2 tbs soy sauce

Method

  • Step 1
    Combine cabbage, celery, capsicum, chives and coriander. Place in plastic bag and put in the fridge until serving time.
  • Step 2
    Place all the dressing ingredients in a screw top jar or container and shake until combined.
  • Step 3
    Add the noodles and nuts and the sauce just before serving.
Recipe Notes
Nice also for a change of salad at the BBQ. I use Changs fried noodles. Only lightly toast the almonds and sunflower kernels.
