Nice with other Thai dishes.
Ingredients
- 1/2 Chinese cabbage thinly sliced
- 2 celery stick diced
- 1 green capsicum diced
- 1 red capsicum diced
- 1 bunch fresh chives chopped
- 1/2 bunch coriander chopped
- 100 g fried noodles
- 3/4 cup flaked almonds toasted
- 3/4 cup sunflower seeds toasted
Dressing
- 1/2 cup olive oil
- 1/4 cup white vinegar
- 1/4 cup brown sugar
- 2 tbs soy sauce
Method

Step 1Combine cabbage, celery, capsicum, chives and coriander. Place in plastic bag and put in the fridge until serving time.

Step 2Place all the dressing ingredients in a screw top jar or container and shake until combined.

Step 3Add the noodles and nuts and the sauce just before serving.
Recipe Notes
Nice also for a change of salad at the BBQ. I use Changs fried noodles.
Only lightly toast the almonds and sunflower kernels.
