Ingredients

  • 450 g potato
  • 450 g sausage (beef)
  • 1/4 g mixed herbs
  • 1 onion
  • 1 egg hard-boiled
  • 2 tsp tomato sauce
  • 1 tsp Worcestershire sauce
  • 2 tsp parsley chopped
  • 50 g dried breadcrumbs

Method

  • Step 1
    Cook and mash potatoes. Mix in sausage meat, herbs, onion, sauces, parsley and half the beaten egg. Shape into 4 round balls, with hollow centres.
  • Step 2
    Cut boiled eggs in half along centre. Mould sausage mixture around eggs. Roll in beaten egg and coat with breadcrumbs.
  • Step 3
    Spray or brush with oil. Bake at 180C for 40-45 minutes.
Recipe Notes
Can be eaten hot or cold, good in a lunch box.
