You will love this for breakfast, a perfect omelette.
Ingredients
- 1 tbs margarine
- 1 onion diced large
- 500 g bacon rashers diced
- 500 g mushrooms sliced
- 4 large egg
- 8 tbs milk
- 4 tomato sliced small
- 1/4 cup tasty cheese grated
Method

Step 1Melt margarine in a non-stick frypan, add diced onion and bacon. Cook for a few minutes then add sliced mushrooms. Cook for a further few minutes, remove from heat.

Step 2Mix together the eggs, milk, salt and pepper, beat until fluffy. Return pan to heat, then add the egg mixture. With an egg-lifter, keep moving the sides of the omelette back to the middle of the pan as it starts to cook.

Step 3Slice the tomatoes and place on top. Cook for about 5 minutes.

Step 4Sprinkle the grated cheese over the top. Preheat the grill and place the frypan under the grill with handle sticking out.

Step 5Keep a close eye on the omelette and remove it from the grill when the top starts to bubble slightly and the cheese is browned lightly.
