These are not for the kids, as the adults will want to eat them all.
Ingredients
- 300 g Madeira cake crumbed
- 2 tbs berry jam
- 1/4 cup cream
- 60 g unsalted butter melted
- 2 cup milk chocolate melted
- 2 tbs rum *to taste
- 1 cup white chocolate melted
- 1 cup milk chocolate melted
- 1 cup dark chocolate melted
Method

Step 1Line a baking tray with baking paper or foil.

Step 2Mix together the cake crumbs, jam, cream, butter, melted chocolate and rum, stirring until moistened.

Step 3Refrigerate for 20-30 minutes, or until firm. Roll teaspoons of the mixture into balls and place on the tray.

Step 4Refrigerate for 10-15 minutes, or until firm.

Step 5Line 3 trays with baking paper or foil.

Step 6Melt the white chocolate while stirring over hot water. Repeat with the milk and dark chocolate.

Step 7Using a fork, dip the truffles in the different chocolates, tapping gently on side of the bowl to drain away the excess.

Step 8Dip a third of the truffles in the white chocolate, a third in the milk and the rest in the dark.

Step 9Leave on baking trays to set.

Recipe Notes
Make sure the chocolate is not too hot, or the truffles will melt and the chocolate will discolour. If you find the chocolate too thick, add 15 g of melted copha. Use any jam.
