A big hit at children's parties.
Ingredients
- 125 g soft butter
- 1 cup icing sugar
- 1/4 cup cornflour sifted
- 1 cup plain flour sifted
- 1/3 cup strawberry jam
- 1 1/2 cup mini marshmallows
- 1 cup desiccated coconut
Method

Step 1Preheat oven to 180C. Grease 2 baking trays and line with paper.

Step 2Beat butter and sugar with an electric mixer until smooth. Add flours, stir to combine.

Step 3Turn dough on to a lightly floured surface. Knead until smooth. Roll out between 2 sheets of baking paper until 5 mm thick.

Step 4Refrigerate for 15 minutes.

Step 5Use biscuit cutters of your choice to make different shapes around 5 cm. Place 2 cm apart on trays. Bake for 15 minutes or until golden.

Step 6Spread jam and arrange marshmallows over biscuits.

Step 7Sprinkle coconut over jam. Bake for 1 minute or until marshmallows soften slightly. Cool on trays.
