Ingredients

  • 125 g soft butter
  • 1 cup icing sugar
  • 1/4 cup cornflour sifted
  • 1 cup plain flour sifted
  • 1/3 cup strawberry jam
  • 1 1/2 cup mini marshmallows
  • 1 cup desiccated coconut

Method

  • Step 1
    Preheat oven to 180C. Grease 2 baking trays and line with paper.
  • Step 2
    Beat butter and sugar with an electric mixer until smooth. Add flours, stir to combine.
  • Step 3
    Turn dough on to a lightly floured surface. Knead until smooth. Roll out between 2 sheets of baking paper until 5 mm thick.
  • Step 4
    Refrigerate for 15 minutes.
  • Step 5
    Use biscuit cutters of your choice to make different shapes around 5 cm. Place 2 cm apart on trays. Bake for 15 minutes or until golden.
  • Step 6
    Spread jam and arrange marshmallows over biscuits.
  • Step 7
    Sprinkle coconut over jam. Bake for 1 minute or until marshmallows soften slightly. Cool on trays.

Mini marshmallows are available in the supermarket in the baking aisle.
