This is a super easy dessert. Serve warm with whipped cream, custard or ice cream. You won't believe how scrumptious it is.
Ingredients
- 1 cup white sugar
- 2 cups plain flour
- 2 tsp bicarbonate of soda
- 1/2 tsp salt
- 2 eggs
- 420 g canned fruit salad
Icing
- 3/4 cup white sugar
- 1/2 cup cream
- 1/2 cup butter
- 1 tsp vanilla essence
Method

Step 1Beat eggs lightly. Add all ingredients except flour and mix well.

Step 2Add flour, mix and bake in a greased 4 L cake pan for 45 minutes at 180C.

Step 3Icing: Boil all ingredients except vanilla or brandy. Remove from heat and add vanilla or brandy.

Step 4Pour over hot cake.
Recipe Notes
Use tin fruit salad including juice.
It will seem like there is too much icing, but use it all.
If using brandy, I always add at least a nip. It gives the cake a bit of punch.
