This is a super easy dessert. Serve warm with whipped cream, custard or ice cream. You won't believe how scrumptious it is. - oldsheila

Ingredients

  • 1 cup white sugar
  • 2 cups plain flour
  • 2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 2 eggs
  • 420 g canned fruit salad

Icing

  • 3/4 cup white sugar
  • 1/2 cup cream
  • 1/2 cup butter
  • 1 tsp vanilla essence

Method

  • Step 1
    Beat eggs lightly. Add all ingredients except flour and mix well.
  • Step 2
    Add flour, mix and bake in a greased 4 L cake pan for 45 minutes at 180C.
  • Step 3
    Icing: Boil all ingredients except vanilla or brandy. Remove from heat and add vanilla or brandy.
  • Step 4
    Pour over hot cake.
Recipe Notes

Use tin fruit salad including juice.

 

It will seem like there is too much icing, but use it all.

If using brandy, I always add at least a nip. It gives the cake a bit of punch.
