A classic homemade chicken noodle soup is an essential in any cook's repertoire, whether it's to warm you on a chilly evening or make you feel better when you've got a cold. This easy recipe, made using cooked chicken and plenty of veg, ticks all the boxes.
Ingredients
- 400g chicken breast fillet cooked shredded
- 440g thin Hokkien noodle broken into pieces
- 1L liquid chicken stock
- 4 cup water
- 3 carrot diced
- 2 celery stick chopped
- 1 onion chopped large
- 2 garlic clove chopped
- 2 tsp dried rosemary
- 1 tsp dried chillies
- 3/4 cup fresh curly parsley
- 1 pinch seasoning *to taste
Method

Step 1Heat 1 tablespoon of oil over medium heat in a large, heavy based stock pot and add onion and garlic. Cook down until onion is softened.

Step 2Add carrots and celery and cook for 4-6 minutes until softened, stirring to combine vegetables.

Step 3Add stock and water to the pot and bring to the boil. Season with salt and pepper, rosemary and chilli.

Step 4Add cooked chicken breast and parsley and simmer, uncovered, over medium-low heat for fifteen to twenty minutes, stirring occasionally.

Step 5Add noodles and simmer for a further five minutes.

Step 6Seasoning the soup with black pepper to taste.

Step 7Serve hot with crusty bread.

I always cook this when I feel a cold coming on or I have had a big week of rich food as the garlic and chilli are great for digestion and circulation.
