We used to love these as kids. Mum made them all the time.
Ingredients
- 1 cup dates chopped
- 60 g butter
- 1 cup brown sugar
- 1 pinch salt
- 1/4 cup walnuts chopped
- 1 cup water
- 1 egg
- 2 cup self-raising flour
- 1/2 tsp bicarbonate of soda
Method

Step 1Combine dates, butter, brown sugar, salt and water in a saucepan. Bring to the boil over low heat stirring constantly. Cook 1 minute. Remove from heat and cool.

Step 2Stir in beaten egg, sifted flour and soda. Fold in walnuts.

Step 3Divide mixture into greased nut roll tins filling no more than 2/3 full; full.

Step 4Cover with foil and bake 180C for 45-50 minutes. Leave in tins a few minutes before turning out.
Recipe Notes
I use 4 soup cans with smoothly cut tops to bake these rolls, but you must grease them really well. I find them excellent and it saves buying tins.
