Ingredients

  • 1 cup dates chopped
  • 60 g butter
  • 1 cup brown sugar
  • 1 pinch salt
  • 1/4 cup walnuts chopped
  • 1 cup water
  • 1 egg
  • 2 cup self-raising flour
  • 1/2 tsp bicarbonate of soda

Method

  • Step 1
    Combine dates, butter, brown sugar, salt and water in a saucepan. Bring to the boil over low heat stirring constantly. Cook 1 minute. Remove from heat and cool.
  • Step 2
    Stir in beaten egg, sifted flour and soda. Fold in walnuts.

  • Step 3
    Divide mixture into greased nut roll tins filling no more than 2/3 full; full.
  • Step 4
    Cover with foil and bake 180C for 45-50 minutes. Leave in tins a few minutes before turning out.
Recipe Notes

I use 4 soup cans with smoothly cut tops to bake these rolls, but you must grease them really well. I find them excellent and it saves buying tins.
