Ingredients

  • 12 pitted dates
  • 180 g soft butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla essence
  • 1 egg yolks
  • 2 cup plain flour sifted
  • 1 1/2 tsp bicarbonate of soda sifted
  • 1 1/2 tsp ground ginger sifted
  • 3/4 cup raw sugar to coat

Method

  • Step 1
    Preheat oven to 180C. Lightly grease baking tray with oil spray.
  • Step 2
    Put dates in a bowl, just cover with boiling water and stand for 5 minutes. Drain and mash them until smooth.
  • Step 3
    With an electric mixer beat the butter, brown sugar and vanilla until pale and creamy. Add egg yolk, then dates and continue beating. Mix in the sifted flour, soda, and ginger until just combined.
  • Step 4
    Roll tablespoonfuls into balls, roll in the raw sugar then place on trays, leaving room for spreading.
  • Step 5
    Bake for 12 -13 minutes.
Recipe Notes
For smaller biscuits use a teaspoon.
