A nice, soft and tasty biscuit to have with your cuppa.
Ingredients
- 12 pitted dates
- 180 g soft butter
- 3/4 cup brown sugar
- 1 tsp vanilla essence
- 1 egg yolks
- 2 cup plain flour sifted
- 1 1/2 tsp bicarbonate of soda sifted
- 1 1/2 tsp ground ginger sifted
- 3/4 cup raw sugar to coat

Step 1Preheat oven to 180C. Lightly grease baking tray with oil spray.

Step 2Put dates in a bowl, just cover with boiling water and stand for 5 minutes. Drain and mash them until smooth.

Step 3With an electric mixer beat the butter, brown sugar and vanilla until pale and creamy. Add egg yolk, then dates and continue beating. Mix in the sifted flour, soda, and ginger until just combined.

Step 4Roll tablespoonfuls into balls, roll in the raw sugar then place on trays, leaving room for spreading.

Step 5Bake for 12 -13 minutes.
