This recipe makes heaps depending on the size you want.
Ingredients
- 250 g plain flour
- 225 g unsalted butter room temperature
- 225 g caster sugar
- 1/2 tsp salt
- 2 egg
- 2 tsp ground cinnamon
- 1 tsp vanilla essence
Method

Step 1Preheat oven to 190C and grease 2 baking trays.

Step 2Cream butter until soft. Add sugar and beat until light and fluffy.

Step 3Beat eggs and vanilla together and stir into butter mixture. Mix in dry ingredients.

Step 4Divide mixture into 4 equal parts, then roll each one into 5 cm diameter logs.

Step 5Wrap tightly in foil and refrigerate or freeze until firm. With sharp knife cut logs into 5 mm slices and place rounds on trays. Bake for 10 minutes or until lightly coloured. Transfer to rack to cool.
