Ingredients

  • 250 g plain flour
  • 225 g unsalted butter room temperature
  • 225 g caster sugar
  • 1/2 tsp salt
  • 2 egg
  • 2 tsp ground cinnamon
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 190C and grease 2 baking trays.
  • Step 2
    Cream butter until soft. Add sugar and beat until light and fluffy.
  • Step 3
    Beat eggs and vanilla together and stir into butter mixture. Mix in dry ingredients.
  • Step 4
    Divide mixture into 4 equal parts, then roll each one into 5 cm diameter logs.
  • Step 5
    Wrap tightly in foil and refrigerate or freeze until firm. With sharp knife cut logs into 5 mm slices and place rounds on trays. Bake for 10 minutes or until lightly coloured. Transfer to rack to cool.
