A very tasty chutney to serve with hot or cold meats.
Ingredients
- 1 kg apple
- 1 tbs salt
- 2 tbs vegetable oil
- 1 tbs brown mustard seeds
- 2 garlic cloves crushed large
- 1 tbs fresh ginger grated
- 1 1/2 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp black pepper coarsely ground
- 1 1/2 cups white wine vinegar
- 1 1/2 cups brown sugar
- 1 lemon grated juiced
- 1 tsp cayenne pepper
Method

Step 1Peel, core and slice or chop apples into small pieces.

Step 2Place in a bowl with salt, stir and leave to stand for an hour. Drain away any liquid.

Step 3Heat oil in saucepan and add mustard seeds, garlic and fresh ginger and fry gently for a couple of minutes, stirring.

Step 4Add cumin, turmeric and pepper and cook for a few more seconds or until aromatic, then add apples with the vinegar, sugar, lemon rind and juice and cayenne pepper.

Step 5Simmer over a slow heat for about 30 minutes, stirring occasionally.

Step 6The mixture should be fairly thick.

Step 7Leave to cool.

Step 8Bottle in dry, sterilised jars and seal.
