Everybody loves these.
Ingredients
- 290 g plain flour
- 240 g unsalted butter room temperature
- 2 eggs lightly beaten room temperature
- 1 tbs cold water
- 100 g walnuts ground
- 100 g icing sugar
- 1 egg yolk room temperature
- 1 tsp vanilla sugar
- 1 cup icing sugar
Method

Step 1Preheat oven to 170C degrees. Lightly grease a baking tray.

Step 2Sift flour into a bowl. Add butter, 1 egg and water and mix to make a dough.

Step 3In another bowl, mix together 100g icing sugar, finely ground walnuts, 1 egg and yolk to make the filling.

Step 4Transfer the dough to a lightly floured working surface. Dust with a little bit of flour and with a rolling pin roll out the cookie dough into a round shape 1cm thick. With a 10cm diameter round cookie cutter cut the dough into small disks.

Step 5On each disk, place one heaped teaspoon of filling in the centre and gently press the edges together.

Step 6Place cookies on a prepared baking tray and bake in a preheated oven for about 15 minutes, or until lightly brown.

Step 7When still warm, dust cookies with icing sugar mixed with vanilla sugar.

Recipe Notes
Sometimes they can crack little bit on top, but the taste is the same.
All cookies can be stored in the freezer in plastic containers, so when you put them on a plate they taste just as a fresh.
When I make these I make double or triple the dough.
