You won't be able to leave this one alone.
Ingredients
- 250 g butter
- 1/2 cup caster sugar
- 1 tsp vanilla essence
- 2 cups plain flour
- 1/2 cup rice flour
- 1 tbs caster sugar plus extra
Method

Step 1Preheat oven to 160C/140C fan-forced.

Step 2Line two baking trays with non-stick baking paper.

Step 3Using an electric beater, beat the butter, sugar and vanilla until light and creamy.

Step 4Sift in the flours and mix together with a non-serrated knife until evenly mixed.

Step 5Gather the dough together and divide into two equal portions.

Step 6Place each portion on a prepared tray and flatten out to a 20cm round.

Step 7Pinch the edges to decorate and score into 8 wedges. Sprinkle with extra caster sugar and bake for 35 minutes or until pale golden.

Step 8Stand on tray for 5 minutes, then transfer to a wire rack to cool.

Step 9Break into wedges to serve.

Step 10Store in an airtight container for up to a week.
Recipe Notes
If you like, you could also add chopped nuts or finely grated lemon or orange rind to the dough.
