Make and freeze in small quantities for future, instant flavour hits! I admit, this idea was pinched from a friend!
Ingredients
- 200 g unsalted butter cubed room temperature
- 1 bunch fresh chives finely chopped
- 1 tsp dried rosemary
- 2 tsp garlic minced
- 1 tsp black pepper coarsely ground
- 1 pinch salt and pepper ground
Method

Step 1In a mixing bowl, combine all ingredients using a hand or stick mixer.

Step 2Separate into golf ball sized portions.

Step 3Wrap, label and place in freezer.

Step 4Defrost and add to simple meals like lamb cutlets (shown) for a great flavour.
Recipe Notes
Before freezing, spread some over fresh bread, then label and freeze - heat in oven until cooked through and crispy for a lovely herb bread accompaniment to Italian and/or barbeque meals.
