Ingredients

  • 200 g unsalted butter cubed room temperature
  • 1 bunch fresh chives finely chopped
  • 1 tsp dried rosemary
  • 2 tsp garlic minced
  • 1 tsp black pepper coarsely ground
  • 1 pinch salt and pepper ground

Method

  • Step 1
    In a mixing bowl, combine all ingredients using a hand or stick mixer.
  • Step 2
    Separate into golf ball sized portions.
  • Step 3
    Wrap, label and place in freezer.
  • Step 4
    Defrost and add to simple meals like lamb cutlets (shown) for a great flavour.
Recipe Notes
Before freezing, spread some over fresh bread, then label and freeze - heat in oven until cooked through and crispy for a lovely herb bread accompaniment to Italian and/or barbeque meals.
