Ingredients
- 1 cup self-raising flour
- 1 tsp ground cinnamon
- 3/4 cup caster sugar
- 1/2 cup carrot finely grated
- 1 cup mixed dried fruit
- 1/2 cup choc bits
- 1/3 cup desiccated coconut
- 2 egg lightly beaten
- 90 g unsalted butter melted
- 1/3 cup walnuts chopped
Cream cheese frosting
- 125 g cream cheese
- 30 g unsalted butter
- 1 1/2 cup icing sugar sifted
- 1 tsp hot water
Method

Step 1Preheat oven to 180C. Lightly grease a 23 cm square shallow cake tin and line with paper over hanging the sides.

Step 2Sift flour and cinnamon into a large bowl. Add sugar, grated carrot, mixed fruit, choc bits and coconut. Stir until combined. Add beaten eggs and butter. Stir again.

Step 3Spread the mixture evenly into prepared tin. Bake for 30 minutes, or until golden.

Step 4Cream Cheese Frosting:< Beat the cheese and butter with electric mixer in a small bowl until smooth.

Step 5Add icing sugar and beat for 2 minutes or until mixture is light and fluffy.

Step 6Add water and beat until combined. Using flat bladed knife, spread mixture on top of the cooled slice. Sprinkle with walnuts.
