Your guests will enjoy this one. Has a very slight chilli taste. But the tomato hides it.
Ingredients
- 8 chicken thighs skin off
- 1/2 cup plain flour
- 1 pinch salt and pepper
- 2 tbs olive oil
- 1 onion halved medium thinly sliced
- 2 garlic clove crushed
- 6 lean bacon rashers cut into strips
- 150 ml white wine
- 1 red chilli finely chopped
- 400 g canned diced tomato
- 1 cup chicken stock (liquid)
Method

Step 1Coat thighs in flour seasoned with salt and pepper, shake off excess.

Step 2Heat oil in fry pan. Brown thighs on both sides and remove from pan.

Step 3Add onion to the pan and saute gently until softened. Add chilli, bacon and garlic and saute for a 2-3 minutes.

Step 4Add wine and allow to simmer.

Step 5Return chicken to pan, add tomatoes and enough chicken stock to just cover the thighs. Season to taste.

Step 6Cook gently for approximately 45 minutes or until chicken is cooked through.
Recipe Notes
Goes well with fried potatoes and green salad. You can add more chilli if desired.
