Your guests will enjoy this one. Has a very slight chilli taste. But the tomato hides it.

Ingredients

  • 8 chicken thighs skin off
  • 1/2 cup plain flour
  • 1 pinch salt and pepper
  • 2 tbs olive oil
  • 1 onion halved medium thinly sliced
  • 2 garlic clove crushed
  • 6 lean bacon rashers cut into strips
  • 150 ml white wine
  • 1 red chilli finely chopped
  • 400 g canned diced tomato
  • 1 cup chicken stock (liquid)

Method

  • Step 1
    Coat thighs in flour seasoned with salt and pepper, shake off excess.
  • Step 2
    Heat oil in fry pan. Brown thighs on both sides and remove from pan.
  • Step 3
    Add onion to the pan and saute gently until softened. Add chilli, bacon and garlic and saute for a 2-3 minutes.
  • Step 4
    Add wine and allow to simmer.
  • Step 5
    Return chicken to pan, add tomatoes and enough chicken stock to just cover the thighs. Season to taste.
  • Step 6
    Cook gently for approximately 45 minutes or until chicken is cooked through.
Recipe Notes

Goes well with fried potatoes and green salad. You can add more chilli if desired.
