A delicious and different kind of Christmas cake.
Ingredients
- 500 g prune chopped
- 250 g dried apricots chopped
- 500 g sultanas
- 250 g dates chopped
- 500 g glace fruit chopped
- 1/4 cup mixed peel chopped
- 1 cup brandy
- 375 g butter
- 2 cup brown sugar
- 6 egg
- 3 cup plain flour
- 1 1/2 tsp salt
- 3 tsp cinnamon sugar
- 3/4 tsp nutmeg
- 3/4 tsp allspice
- 2 banana ripe
- 1 cup walnuts
- 1 cup brandy
Method

Step 1Combine prunes, apricots, sultanas, dates, glaced fruits, peel and ½ cup brandy in a large bowl. Cover, let stand for 8 hours.

Step 2In a large mixing bowl, cream butter or margarine and brown sugar until fluffy. Add eggs one at the time, beating well after each addition.

Step 3Stir together flour, salt and spices. Add flour mixture alternately with mashed bananas to creamed mixture.

Step 4Stir in the walnuts and fruit mixture.

Step 5Divide batter into well greased and floured loaf tins. Bake at 120C for the time indicated or until cake test is done. Cool 10 minutes in tins. Remove to wire racks, cool completely.

Step 6Pour remaining½ cup of brandy over cakes. Wrap in brandy soaked cheese cloth or muslin, overwrap in foil. Store in fridge for up to 3 weeks before slicing, adding extra brandy to soak cakes occasionally.
Recipe Notes
Makes 15 cups mixture. Cake pans to use: 23 cm x 12 cm x 8 cm = 4cups of batter. Bake for 3 hours. 19 cm x 8 cm x 5cm = 3 cups of batter. Baking time 2 hours. 11 cm x 6 cm x 4cm = 2 cups of batter. Baking time 2 hours.
