This is a colourful family favourite. Very quick and easy to make.
Ingredients
- 250 g spirals pasta shapes
- 1 carrot grated small
- 1/2 red capsicum diced
- 1/2 green capsicum diced
- 310 g canned corn cob kernels drained
- 1 cup coleslaw dressing
- 3 tbs sour cream
Method

Step 1Cook pasta according to packet instructions. Drain and rinse in cold water.

Step 2Place in a large salad bowl with chopped vegetables, stir to combine.

Step 3Mix coleslaw dressing and sour cream together, stir through pasta.

Step 4Chill in refrigerator.

Recipe Notes
I sometimes add a small diced onion or diced ham to the mix. Great for BBQ's when you are asked to bring a salad. I also use lite sour cream and 99% fat free coleslaw dressing. The choice is up to you.
