Ingredients

  • 1 cup extra light olive oil
  • 3 egg
  • 3/4 cup caster sugar
  • 3 tsp vanilla extract
  • 2 1/2 cup self-raising flour sifted
  • 3/4 cup milk
  • 1 cup fresh blueberries

Method

  • Step 1
    Preheat oven to 180c. Spray a 6 cm deep, 19 cm cake pan with oil and line the base with 2 layers of baking paper.
  • Step 2
    Place oil, eggs, sugar and vanilla in a bowl. Whisk to combine.
  • Step 3
    Add half the flour and milk and stir to combine. Repeat with remaining flour and milk.
  • Step 4
    Pour mixture into prepared pan and sprinkle with blue berries.
  • Step 5
    Bake for 1 hour and 10 minutes or until a skewer inserted into centre of cake comes out clean.
  • Step 6
    Stand cake in pan for 10 minutes. Line a wire rack with baking paper and turn cake onto wire rack to cool further. Dust with icing sugar and serve with yoghurt.
Recipe Notes
You can also serve it with icecream or custard. Frozen blueberries can be used. Cover with foil during cooking if over-browning.
