A rich, moist chocolate cake, definitely for the chocolate lovers.
Ingredients
- 300 g dark chocolate broken into pieces
- 250 g butter
- 5 egg separated
- 2 tbs brandy
- 75 g sugar
- 100 g self-raising flour
- 1 pinch salt
Glaze
- 175 g dark chocolate broken into pieces
- 200 ml cream
Method

Step 1Preheat oven to 150C.

Step 2Place the chocolate and butter in a bowl over a pan of simmering water

Step 3Leave until melted and smooth, stirring once or twice.

Step 4Allow to cool slowly.

Step 5Place the egg yolks, brandy and sugar in a bowl.

Step 6Whisk until thick and creamy and fold in cooled chocolate mix.

Step 7Sift the flour over the top and fold in all the flour.

Step 8Whisk the egg whites with the salt until they form soft peaks and fold into the chocolate mix, being careful not to knock out the air.

Step 9Pour the mixture into a cake tin and back for 50-60 minutes or until firm to the touch.

Step 10Take from the oven and allow to cool in the tin.

Step 11Glaze: Put the chocolate and cream in a bowl and place over a pan of gently simmering water.

Step 12Let chocolate melt and stir until smooth.

Step 13Allow to cool until it is soft and spreadable. Turn the cake out onto a serving plate.

Step 14Spread the glaze over the top of the cake and decorate as desired.
