Ingredients

  • 300 g dark chocolate broken into pieces
  • 250 g butter
  • 5 egg separated
  • 2 tbs brandy
  • 75 g sugar
  • 100 g self-raising flour
  • 1 pinch salt

Glaze

  • 175 g dark chocolate broken into pieces
  • 200 ml cream

Method

  • Step 1
    Preheat oven to 150C.
  • Step 2
    Place the chocolate and butter in a bowl over a pan of simmering water
  • Step 3
    Leave until melted and smooth, stirring once or twice.
  • Step 4
    Allow to cool slowly.
  • Step 5
    Place the egg yolks, brandy and sugar in a bowl.
  • Step 6
    Whisk until thick and creamy and fold in cooled chocolate mix.
  • Step 7
    Sift the flour over the top and fold in all the flour.
  • Step 8
    Whisk the egg whites with the salt until they form soft peaks and fold into the chocolate mix, being careful not to knock out the air.
  • Step 9
    Pour the mixture into a cake tin and back for 50-60 minutes or until firm to the touch.
  • Step 10
    Take from the oven and allow to cool in the tin.
  • Step 11
    Glaze: Put the chocolate and cream in a bowl and place over a pan of gently simmering water.
  • Step 12
    Let chocolate melt and stir until smooth.
  • Step 13
    Allow to cool until it is soft and spreadable. Turn the cake out onto a serving plate.
  • Step 14
    Spread the glaze over the top of the cake and decorate as desired.
