Ingredients

  • 6 slices bread crusts removed
  • 30 g soft butter
  • 400 g canned strawberries
  • 3 egg
  • 2 tsp cornflour
  • 1/4 cup caster sugar
  • 2 1/2 cup milk
  • 1 tsp vanilla essence
  • 1/2 cup thickened cream *to serve

Method

  • Step 1
    Lightly butter bread and cut each slice in 4 triangles. Arrange triangles in a rectangular oven proof dish.
  • Step 2
    Drain berries and reserve syrup. Sprinkle berries over bread.
  • Step 3
    Lightly beat eggs, cornflour and sugar together in bowl, then gently beat in combined milk and essence.
  • Step 4
    Pour half the mixture over the berries in the dish. Stand for 10 minutes, then pour in the remaining mixture.
  • Step 5
    Stand the pudding dish in a large baking dish containing enough boiling water to come halfway up the side of the pudding dish.
  • Step 6
    Bake at 180c for about 45 minutes, or until set.
  • Step 7
    While the pudding is cooking, place reserved syrup into a small saucepan. Bring to boil. Boil, uncovered for about 5 minutes or until syrup is reduced by half and thickened slightly.
  • Step 8
    Serve pudding warm or chilled, with cream and reserved syrup.
  • Step 9
    Sprinkle with icing sugar if desired.
Recipe Notes

This recipe can be prepared a day ahead, kept covered in fridge. You can also use fresh berries cooked in your own syrup if you wish. I used canned berries in syrup.
