A nice treat for that special occasion.
Ingredients
- 6 slices bread crusts removed
- 30 g soft butter
- 400 g canned strawberries
- 3 egg
- 2 tsp cornflour
- 1/4 cup caster sugar
- 2 1/2 cup milk
- 1 tsp vanilla essence
- 1/2 cup thickened cream *to serve
Method

Step 1Lightly butter bread and cut each slice in 4 triangles. Arrange triangles in a rectangular oven proof dish.

Step 2Drain berries and reserve syrup. Sprinkle berries over bread.

Step 3Lightly beat eggs, cornflour and sugar together in bowl, then gently beat in combined milk and essence.

Step 4Pour half the mixture over the berries in the dish. Stand for 10 minutes, then pour in the remaining mixture.

Step 5Stand the pudding dish in a large baking dish containing enough boiling water to come halfway up the side of the pudding dish.

Step 6Bake at 180c for about 45 minutes, or until set.

Step 7While the pudding is cooking, place reserved syrup into a small saucepan. Bring to boil. Boil, uncovered for about 5 minutes or until syrup is reduced by half and thickened slightly.

Step 8Serve pudding warm or chilled, with cream and reserved syrup.

Step 9Sprinkle with icing sugar if desired.
Recipe Notes
This recipe can be prepared a day ahead, kept covered in fridge. You can also use fresh berries cooked in your own syrup if you wish. I used canned berries in syrup.
