Ingredients
- 1 pastry case
- 1/3 cup caster sugar
- 1/3 cup lemon juice
- 1/4 cup thick cream
- 2 tsp lemon rind grated
- 3 eggs
Method

Step 1Whisk together the sugar, lemon juice, cream and rind.

Step 2Beat in eggs one at a time and mix well.
