Ingredients

  • 2 cups self-raising flour
  • 1/3 cup brown sugar firmly packed
  • 100 g walnuts coarsely chopped
  • 1 tsp bicarbonate of soda
  • 2 eggs whisked
  • 1 cup milk
  • 2 bananas large mashed

Method

  • Step 1
    Preheat oven to 180C. Line the base and sides of a 6 cm deep 20x10 cm loaf pan with baking paper.

    Sift flour into large bowl. Add the sugar, walnuts and bicarbonate of soda.
  • Step 3
    Stir to combine.
  • Step 4
    Add egg, milk and banana and gently fold until well combined.
  • Step 5
    Spoon the mixture into the pan. Bake for 45 minutes or until skewer inserted comes out clean.
  • Step 6
    Set aside to completely cool. Cut bread into slices to serve.

Recipe Notes

Tastes very nice with butter and honey.
