A very easy and fast loaf to make.
Ingredients
- 2 cups self-raising flour
- 1/3 cup brown sugar firmly packed
- 100 g walnuts coarsely chopped
- 1 tsp bicarbonate of soda
- 2 eggs whisked
- 1 cup milk
- 2 bananas large mashed
Method

Step 1Preheat oven to 180C. Line the base and sides of a 6 cm deep 20x10 cm loaf pan with baking paper.

Step 2Sift flour into large bowl. Add the sugar, walnuts and bicarbonate of soda.

Step 3Stir to combine.

Step 4Add egg, milk and banana and gently fold until well combined.

Step 5Spoon the mixture into the pan. Bake for 45 minutes or until skewer inserted comes out clean.

Step 6Set aside to completely cool. Cut bread into slices to serve.
