Ingredients

  • 2 eggs
  • 1/2 cup milk
  • 3 tbs plain flour
  • 1 pinch salt and pepper *to taste
  • 1 cooking oil spray

Method

  • Step 1
    Mix all ingredients together, except for the spray, and stand in refrigerator for at least 2 hours.
  • Step 2
    Heat oven to 210C. Spray muffin pan with oil and add a little oil to each.
  • Step 3
    Place muffin pan in oven until really hot.
  • Step 4
    Add a small amount of mixture to muffin pan and return to hot oven.
  • Step 5
    Puddings should rise and be ready in 20 minutes.
Recipe Notes

The most important thing is to get the oven really hot and the oil really hot so that the mixture sizzles when added.

If using a fan-forced oven, reduce the flour to 2 tablespoons.
