If you're a fan of the the ice cream, you'll love this Golden Gaytime inspired birthday cake.
Ingredients
- 1 packet vanilla cake mix
- 1 bowl chocolate buttercream icing
- 1 packet Arnott's Malt 'O' Milk biscuits
- 250 g cream cheese
- 100 g butter
- 1 1/2 cups icing sugar
- 1 can Nestle Top 'n' Fill Caramel
Method

Step 1Make your vanilla cake according to the packet directions. Grease and line a 23cm x 18cm rectangular cake tin. Pour the cake mix in and bake it according to the packet directions.

Step 2To make the caramel filling: Combine the cream cheese, butter and caramel in a mixer and mix on medium speed until smooth and combined. Add the sifted icing sugar in two lots and mix until smooth and combined.

Step 3Make a quantity of chocolate buttercream icing.

Step 4Put the biscuits in a large ziploc bag and use a rolling pin to lightly crush the biscuits into 5mm pieces.

Step 5Once the cake is cooked, let it cool. Trim two of the corners so that they are rounded like the top of an ice cream.

Step 6Use a large bread knife to slice the cake into two layers by following the line you scored with the paring knife.

Step 7In the middle of the cake, spread with the caramel filling. Place the top on, then spread the chocolate buttercream over the top and sides of the cake until covered. Place the cake in the fridge for at least 30 minutes.

Step 8Sprinkle the biscuit pieces over the top and press pieces into the sides.

Step 9Slide a large popsicle stick into the bottom of the cake to complete the Golden Gaytime ice cream illusion.
Recipe Notes
If you are pushed for time to make the buttercream, you can buy a can of Betty Crocker vanilla frosting and add 2-3 tablespoons of cocoa.
